A turnip sausage

The ciuìga del Banale is the sausage made with white turnips, typical of the locality of San Lorenzo Dorsino.
Its origins date back to the second half of the 19th century when, in a time of poverty, families raised pigs to sell their best parts and kept the less noble ones for themselves to make a sausage by adding, precisely, the inexpensive white turnips. The name derives from the typical pine cone shape,“ciuìga” in the local dialect.
Today, ciuìga is made with 70 percent pork and only 30 percent turnips and has obtained the Slow Food presidium.
In autumn, San Lorenzo Dorsino organizes its festival, a mouth-watering event through the streets of the village that features it on the menus of all the restaurants, from the typical inn to the gourmet. In the stands, set up in the old farmhouses, it is possible to taste this cured meat and buy many other typical products of this area.
